Coq au Vin (Slow Cooker) Gluten-Free Slow Cooker Chicken
This is a recipe taken from a blog that I read quite often myself & helped me get started in learning how to eat Gluten-Free. The Gluten-Free Homemaker. (she has tons of wonderful easy recipes) I linked it to her blog name, but I will paste the ingredients you need to get started here below.
Coq au Vin is a French dish which means “rooster in red wine.” It is not traditionally a slow cooker recipe, but it adapts well to the crock pot.
The original calls for “Chicken thighs with bone and skin” for this recipe, I have tried it w/skinless, boneless chicken breasts & also with skinless boneless chicken thighs, either way, it’s delicous.
As in the original recipe, I also do not add the cornstarch to make it into a gravy.

- 6 slices bacon
- 8 chicken thighs with bone and skin (about 4 pounds)
- 4 – 8 oz. small mushrooms (I used baby bellas)
- 1 large onion
- 3 cloves garlic
- 2 c. red cooking wine
- 1 bay leaf
- 1/2 tsp. ground thyme
- salt & pepper (approximately 1/2 tsp. each)
- 1/4 c cornstarch+1/2 c. water (if desired)
This is a great meal to make in the morning when you know you’re going to have a busy day. You come home, dinner is ready – love that!! This is also absolutely great made ahead – freeze & thaw when desired, great time saver. The recipes I’m giving you this week are all very easy, healthy, uncomplicated & absolutely perfect for cooking ahead of time, freezing & having on hand when you don’t feel like cooking. Try it, take your next day off & make all of these recipes, or a couple to try them out & save them for later. I’m also trying to keep all the recipes easy to shop for, no exotic/scary ingredients, things you can get to in a pinch, or have on hand in your house already. Happy cooking!!
